Fish Tacos

Serves 9 people

Ingredients:

½ cup sour cream 

½ cup mayonnaise

¼ cup of chopped fresh fish (any kind)

1 package of Ortega Tacos

2 pounds cod or white fish fillets cut into 1-inch pieces. 

2 tablespoon of vegetable oil

2 tablespoon of lemon juice

Directions:

1. Combine sour cream, mayonnaise, cilantro and 2 tablespoons of seasoning mix into a small bowl.

2. Take cod oil lemon juice and reaming season mix into medium bowl.

3. Pour it into a large skillet stirring constantly.

4. Fill taco shells with fish mixture topped with shredded cabbage, diced tomato, sour cream mixture, limejuice and Ortega taco sauce.

 Let it cook for 4-5 min.

I choose this recipe because before my father moved to Spain and he always ate fish tacos. It is special to me because every time somebody eats it, it reminds me of my dad.

Fried Chicken

Serves 6 people

Ingredients

1 chicken

Half of an onion

1 tablespoon of pepper

3 large lemons

2 cups of flour

Directions: 

1. Mix salt, pepper, half of an onion and three large lemons with the chicken.

2. Put flour on top of the ingredients so it will be

Crunchy when it’s cooked.

3. Put the chicken in the oven for a hour at 325 degrees.

4. When the chicken is ready, let it cool down for a while.

I got like this dish because I really like it. When it is cooked a lot of my family comes over to eat.

Rice and Chicken

Serves: 15 People

Ingredients:

2 pounds of yellow rice

2 pounds of chicken

1 pint of oil

½ lb. of tomato                          

½ lb. of red pepper

1 pound of onion

16 oz. of Ranchero Liquid Seasoning  

8 oz of Sofrito Seasoning

10-15 of olives         

1 pint of salt

Directions:

1. Get a pan and put oil inside. Let it stand for 4-5 minutes.

2. After 4-5 minutes pour 2 pounds of rice in the pan and stir.

3. Next get a board and put the chicken on it and chop into fine pieces.

4. Next get the two seasonings, put it on the chicken and add salt.

5. Add the chicken to the pan with the rice and stir together.

6. Next add tomato, pepper, onions and the olives.

7. Finally serve and eat.

I chose to put this recipe in the class cookbook because it tastes really good and I think my classmates will really enjoy it. This recipe comes from Cape Verde.

Rice Crispy Treats

Serves 6-8 People

Ingredients:

3 tbs. butter

1pkg/4cups of marshmallows small or big

6 cups Rice Krispies Cereal

½ container of frosting

1bag  twizlers

1 container of candy sprinkles

2 boxes of fruit roll ups

Directions

1. In a large microwave bowl, melt butter and marshmallows on high for two minutes, stirring after 1 minute. Continue to stir until mixture is smooth and well blended.

2. Add Rice Krispies cereal stirring until well coated. Spread cereal mixture into a13x9x2 inch baking pan.

3. Let cool. Cut out kite shapes.

4. Decorate with frosting and candy sprinkles.

Use twizlers for a tail and the fruit roll ups for ribbons.

I picked these because my grandmother used to make these all the time before she died.

Rice

Serves 10 people

Ingredients

1 pot of boil water

1 teaspoon of salt

Directions

1. Take a pot.

2. Fill the pot with water.

3. Then put salt in the water.

4. Add the rice to it and let it boil

5. And then let it cook for 45min.

6. Then you put it in a bowl and eat it.

Egg Rolls

Serves 17 people

 

Ingredients:

1/2 pound pork beef

1/2 pound chopped carrots

1/2 pound noodles

 

1. Chop carrots carefully with a sharp knife

2. Chop pork beef carefully with a sharp knife

3. Roll pork beef with chopped carrots and noodles together

4. Roll egg roll shell with chopped pork beef, noodles, and chopped carrots

5. Put egg rolls on a plate

6. Put egg rolls on pan (oil) and fry it

Baking instructions

Fry the egg rolls on a pan with oil until it turns brown.

Use a fryer to take out the egg rolls and put it on a plate to eat. Let it cool so you won’t burn your tongue and then serve it.

I am including this recipe in the class cookbook because the egg rolls seem Asian and I’m Asian so it represents the Asian people. My mom makes the best egg rolls. It’s very common, people know about egg rolls.

Sancocho

Serves: 5 people

Ingredients:

2 Platano

1 Half pound of yuca

1 Frozen box of squash

3 Carrots

4 Potatoes

1 Half pound of chicken

6 Slices of beef

4 Slices of pork

5 Slices of corn

6 Grains of garlic and onions

1 Pepper and cilantrantro

1 Can of Abdobo Goya 

 Directions:

1.     Make a seasoning with onions, garlic, and peppers. Blend it in the blender.

2. Mix the seasoning with the meat.

3. Fry the meat for a couple of minuets then you add water. 4. Cook the meat until it is cooked.

5. Peel all the vegetables that need to be peeled. Then you add all the ingredients in a big pot with soup and water.

6. Add frozen squash

7. Add Abdobo Goya seasoning to the mixture, let the whole mixture cook until it boils   

 I chose this recipe because it is my favorite food to eat. It is also healthy and it’s from my mom’s country. It has lot of flavor and it has lots of vitamins.
